in a while, but can you believe – I saw a double rainbow two days ago after a brief rainstorm?

It was a good reminder to move onto the next color in our ROYGBIV veggie/fruit rainbow
Guess which color we’re on?! GREEN!!! I don’t know about you, but I have a hard time getting my leafy bitter greens onto the table regularly. Salads w/common romaine, red leaf, arugala, sure! But kale, broccoli rabe, mustard greens, collards? They aren’t recurring roles in the cast of foods I prepare on a regular basis. But I’d sure like them to be as they are powerfully nutritious. I’m getting there. Slowly. The easiest way I’ve found to consume some nutritious greens is by whipping up a refreshing smoothie! I can thank my friend, Christine, over at Complete Mind and Body for this tasty, nutritional treat.
Say hello to Curly Kale. Are you ready to have a sweet n’ icy dance?!
Did you know kale has great antioxidant properties, is an anti-inflammatory, a source of calcium and contains sulforaphane, believed to be a powerful anti-cancer property? Yep! And fiber & several other vitamins and minerals too. Grab yourself some!
Then gather a mixture of frozen fruit (In this bowl I have peaches, strawberries, mangos and pineapple). You might want a couple ice cubes as well.
Oh, look at that lonely banana. Just wait…
Now here’s something sweet. Agave Nectar! Did you know the agave plant was good for more than tequila? Who knew?! Agave nectar is a naturally occurring fructose that has a low glycemic index. It’s a decent option for diabetics as it takes less agave to satisfy your sweet craving than does table sugar. Grab some agave or local honey if you prefer
So, here’s all the players in our simple green smoothie. Pretty easy!
Take one one of those kale leaves, tear it up and toss it into your blender pitcher.
Add the banana. Not so lonely now, eh?
Then some frozen fruit and your ice cubes. (I like about two parts fruit to one part greens.)
Don’t forget 1 cup of cool water.
Drizzle agave nectar to taste.
Ain’t it perty?! (Yes, I know, “ain’t” ain’t a word and “perty” is spelled PRETTY.)
Pop the lid on and connect your pitcher to the whirly buzz. That’s what I’m gonna call it. Not a blender. A whirly buzz. (Get over it.)
Look at it go! WHIRL – buzzzzzz. WHIRL – buzzzzzz. weee!
Then pour yourself a … Wait, that doesn’t look so appetizing! It looks almost science fiction to me!
Blurp.
Oh, but it tastes good. I promise. Even your kids will love it. I promise.
See… it looks harmless! Even perty, yeah?
Yum. It’s g o o d ! {and is so good for ya}
. . . . . . . . . . . . . . . .
Even so, I can’t get the science fiction off my mind. If this were a science fiction blog, what would you call this monster?
Oh, forget that. – It ain’t no monster. It’s perty! (And oh so deliciously nutritious!)
BUT. If it weren’t so perty. It could be a monster!

Yum, I have had one of these “perty” green monsters and they are delicious! Everyone should try one.
I was a little weirded by the kale, but after the monster naming I don’t know if I could get that down the gullet! (Although I’m sure it’s delicious – everything you make is!)
